We believe in employing traditional techniques in combination with modern tools to maximize the quality of our wines. George Chelf, our winemaker, believes that preservation of the grape’s natural character and “terroir” should be translated into the bottle with as little manipulation as possible. Grapes are gently pressed without extracting harsh tannic acids from the skins. Modern pumps and gravity are utilized to transfer wine from tank to barrel. We presently use 75% French oak barrels for fermentation of our Chardonnay and for the aging of our red wines.
The long-term goal is to utilize 80% to 90% French oak. We believe that oak should not overwhelm the flavors in the wine, but should gently “season” the wine and aid in its slow maturation.
